Most home brewers treat the roast date stamp like the whole story. Find a bag roasted within the last two weeks, buy it, brew it, done. The problem is that date is just a starting point. What actually determines whether the coffee inside is in good shape — or already on its way out — is a set of physical signals the bag itself is broadcasting, and most of us walk right past them.
Here's the useful reframe: your bag of coffee is a gas management system first and a container second. Freshly roasted coffee releases carbon dioxide continuously, and at a rate that changes depending on roast level, bean density, storage temperature, and how long it's been sitting. Everything about how a bag is designed and how it looks and feels right now is a direct response to that gas reality. Once you understand what the bag is managing, you can read it.
The valve is doing something specific — and its condition tells you something specific back
That small circular widget on most specialty coffee bags is a one-way degassing valve. It lets CO2 out without letting oxygen in. This is genuinely important engineering: without it, a sealed bag of fresh coffee would bloat and eventually burst. With it, the coffee can off-gas safely while staying protected from the oxygen that causes staling.
But the valve's condition matters. Press your finger over it and give the bag a firm squeeze. You should feel slight resistance and then a quiet release of gas through the valve. If nothing comes out, either the coffee has already degassed significantly (older than it might seem, or stored somewhere warm), or the valve is clogged, which means gas has been building up inside with nowhere to go — not ideal. If the bag is dramatically puffed out, the coffee is very fresh and has been off-gassing hard, which is actually a good sign, though it also means you might want to wait a few days before brewing espresso with it.
A bag with no valve at all is a different product. It either shipped with significant time already elapsed post-roast (so the degassing surge had already passed), or it was flushed with nitrogen before sealing to displace oxygen. Neither is automatically bad, but it changes what the roast date means. A no-valve bag dated two weeks ago is in a very different state than a valved bag dated two weeks ago.
Bag shape tells you about temperature history
This one is underused. A properly sealed bag should hold its shape when you press the sides in and release — it springs back. If the bag feels almost vacuum-sealed, collapsing easily and staying collapsed, that's a sign the coffee has degassed heavily, which usually means it's been stored somewhere warm. Heat dramatically accelerates CO2 release. Coffee sitting in a warm car, a sunny shelf, or near a stove will lose most of its degassing gases in days rather than weeks, and it takes its aromatic volatiles with it.
This isn't a guarantee of a bad cup, but it's worth knowing. A bag that behaves like it's nearly vacuum-sealed and was roasted ten days ago should make you curious about its storage journey before it reached your hands.
The smell at the valve is a faster freshness test than any date
Press the bag firmly and put your nose near the valve as you release pressure. You're doing a crude but effective aromatic test. Fresh, well-stored coffee releases a clear, clean smell — you'll get something recognizable as the roast character, whether that's fruit, chocolate, nut, or something floral. It should have presence and lift.
If what comes out smells flat, cardboard-adjacent, or faintly musty, that's oxidation or moisture damage, and no amount of dialing in will fix it. You're working with compromised material. This test takes about four seconds and is more informative than reading the bag copy.
What the roast date actually tells you, properly contextualized
Now the date is useful. Once you've assessed the valve, the bag structure, and the smell, the roast date helps you interpret what you're finding. A bag that's three weeks old but stored cold, has a functioning valve, springs back normally, and smells clean is probably in better shape than a bag that's ten days old but has been sitting in a warm retail display with a clogged valve.
For filter brewing — pour-over, drip, French press — coffee is generally in a good extraction window from about four days post-roast through three to four weeks, assuming decent storage. Very fresh coffee (one to three days) can actually brew unevenly because the CO2 still saturating the grounds resists water absorption. For espresso, that fresh coffee often needs even more resting time, sometimes up to two weeks, because the CO2 causes wild pressure instability in the shot.
So if you're buying something roasted yesterday and planning to pull espresso tonight, the bag's date is working against you regardless of everything else.
One thing worth doing at home right now
If you have a bag open on your counter, close it as well as you can — roll the top down tight, use the built-in clip if it has one — and put it somewhere away from heat and light. Not the freezer unless you've committed to a full airtight container freeze (a half-open bag in the freezer introduces moisture every time it comes out). Room temperature in a cabinet, sealed well, beats a freezer done carelessly every time.
The goal isn't to make coffee precious. It's to stop losing quality to variables you can actually control with almost no effort. The bag already has most of the information you need — you just have to know what you're looking at.
