Nobody talks about this one. You've dialed in your grind. You've nailed your ratio. You've even started weighing your beans to the tenth of a gram. And yet, reliably, Saturday morning coffee tastes a little flat, a little sharp, or just subtly off compared to Wednesday. You blame the beans. You blame your mood. You blame the fact that you're not rushing.
Here's what's actually happening: your water changed.
Why Water Chemistry Isn't Constant
Most home brewers think of tap water as a stable input — hard or soft, filtered or not, and that's that. But municipal water treatment isn't a static process. Water utilities adjust chlorine and chloramine dosing, blending ratios between source reservoirs, and pH correction continuously, and those adjustments don't follow a random schedule. They follow a demand schedule.
Weekday mornings, large commercial and industrial users draw heavily from the system. Utilities are running at steady throughput, and treatment parameters are calibrated for that volume and flow rate. On weekends, especially Sunday mornings, residential demand spikes while commercial demand drops. Flow rates slow. Water sits longer in distribution pipes. Utilities often compensate by adjusting disinfectant levels — sometimes up, sometimes down depending on their protocols and the season. The result is tap water that, on a given Sunday morning, can have meaningfully different chlorine content, different pH, and slightly different mineral concentration than it did on Thursday.
None of this makes your water unsafe. It's all well within regulatory limits. But coffee extraction is sensitive to differences that water safety regulations don't need to care about.
What Those Shifts Actually Do to Your Cup
Three things in your water directly affect how coffee tastes, and all three can vary day to day.
Chlorine and chloramines are the easiest to understand. These disinfectants react with aromatic compounds in coffee — the ones responsible for floral and fruit notes especially — and flatten them. A Sunday morning with elevated residual chlorine isn't going to taste like pool water, but it will taste duller. The bright top notes you got on Wednesday just won't be there. This is also why the same beans brewed at a hotel taste like nothing: high-chloramine municipal water plus no filtration.
Total dissolved solids (TDS) and mineral balance matter because magnesium and calcium are the primary ions that help extract flavor compounds from coffee grounds. Water that's too soft doesn't have enough mineral charge to pull much out; water that's too hard has competing ions that interfere with extraction and add their own chalky aftertaste. If your utility blends from multiple sources — a common practice during variable demand periods — the mineral ratio can shift enough to noticeably change how full or empty your cup tastes.
pH affects both extraction efficiency and perceived taste. Slightly more acidic water extracts faster and emphasizes sourness; more alkaline water dulls acidity and can make a coffee taste flat or baking-soda-adjacent. Municipal pH adjustment happens continuously, and the range allowed by regulators (6.5 to 8.5) is wide enough to include meaningfully different sensory outcomes in your cup.
How to Tell If This Is Your Problem
You don't need a chemistry lab. Fill a glass of tap water and smell it on a weekday morning, then again on Sunday. If you notice a more pronounced chemical or faintly bleach-like smell on one day versus the other, chlorine variation is real in your system. If the smell is roughly the same both days, your utility is likely more consistent and water chemistry probably isn't your variable.
A more reliable test: brew the same recipe on a weekday and on a weekend with the only difference being that you use bottled water (look for a label showing 50–150 mg/L TDS — that's the sweet spot for most brewing methods) instead of tap. If the weekday/weekend difference disappears, your tap water was the culprit.
Three Adjustments Worth Making
Use a carbon filter and actually replace it. A standard activated carbon filter — the kind in a Brita-style pitcher or an inline faucet filter — removes chlorine and chloramines effectively. The catch is that a carbon filter loses capacity over time, and most people run them long past their useful life. If your filter is more than two months old and you're brewing daily, it's probably not doing much. A fresh carbon filter eliminates the chlorine variable entirely and costs almost nothing.
Keep one consistent water source for dialing in. If you use tap water day-to-day, fine — but when you're actually trying to dial in a new bean or troubleshoot a brew, use the same bottled water every time. This takes water chemistry off the table as a variable while you're making adjustments, and your grind and ratio changes will be easier to evaluate clearly.
Notice your water's behavior, not just its source. Hard water leaves visible scale buildup in your kettle and around your faucet. If you're seeing heavy limescale, you have high-mineral water that may be muting acidity and contributing to a flat or slightly bitter baseline. A simple kettle descale (citric acid dissolved in water, left to soak) tells you a lot — if you're amazed by how much buildup comes off, your water hardness is probably affecting your cups more than you realized.
The Bigger Point
Water is the ingredient that makes up more than 98% of your cup, and most home brewers treat it as an afterthought — a neutral carrier for the interesting stuff. It isn't. It's an active participant in extraction, and it varies in ways that are invisible until you know to look.
You don't need to become a water chemistry enthusiast or start measuring ion concentrations at home. You just need to accept that 'tap water' is not a constant and build one simple habit: when your coffee tastes off and nothing obvious has changed, check your water before you start chasing your grind setting.
Wednesday's cup isn't always better because you're more alert and in a routine. Sometimes it's just better water.
